Saddle of rabbit (gluten-free)


  • 2 rabbit saddles
  • 3 tbsp brown sugar
  • 3 tbsp herb le salt
  • 4 tbsp rabbit seasoning
  • 5 tbsp olive oil



Place all the ingredients together in a large bowl and mix together well. Leave to marinate for 1 hour. When ready, roll the rabbit in cling film and cook in boiling water for 30 minutes. Serve the cooked rabbit on a bed of carrot pure topped with herbed cabbage and red wine jus sauce.
