Risotto Porcini


  • 150g risotto rice
  • 100g dried porcini ( soaked in water for 1hr )
  • 500ml beef Stock
  • 100g Parmesan
  • 1 small onion, finely chopped
  • 4 tbsp olive oil
  • 50g butter
  • 100ml beef Jus
  • 100ml white wine
  • Salt and Pepper


Saute onion. Add rice. Reduce white wine. Gradually add Beef stock. Add porcini. Finish off with beef Jus, Parmesan and butter.
