Start this recipe by frying the onion, garlic, apple and herbs together for 5 minutes with a tablespoon of olive oil. Remove off the heat and stir in the pistachios, prunes, orange zest, cooked quinoa and season well with salt and pepper. Open up the turkey breast and lay over the stuffing mixture. Roll up tightly and wrap over the bacon slices. Wrap up in foil and place onto a baking tray. Bake in the oven at 200`c for 20 minutes then remove the foil and continue to cook for 15 minutes. Remove from the oven and allow to rest for 5 minutes before cutting up and serving with roasted potatoes and vegetables
