Method

Peel the prawns. Blend half the mango in a food processor until pureed, set aside and dice the other half of the mango. Half and slice the avocado removing the stone slice and drizzle with lemon juice, set aside. Heat the olive oil in a frying pan, add the ginger garlic and prawns. Stir fry for 2-3 minutes. Drizzle with lime juice and remove from the heat. Dress the rucola with extra virgin olive oil and serve.
