Cut pork loin into 4 pieces and hammer flat. Dust into flour and put into a heated pan with olive oil. Sear the pork for 2 minutes on each side. Add the apples and leeks and cook for a further 4 minutes. Remove the pork fillets from the pan and put aside. Add the oyster sauce, chicken stock and leave to reduce. Finally add a dash cream, serve and enjoy.
