Peel the pears but leave stems on. In a deep saucepan, bring wine and water to a simmer. Add the vanilla essence, cinnamon sticks, bay leaves, sugar, mixed spice and ground cinnamon. Add pears to the liquid and simmer with the lid on for about 30 minutes, or until the pears are tender (cooking time will vary depending on how ripe the pears are)Turn the heat off, take the lid off and let the pears cool down completely in wine mixture. Serve the pears at room temperature.
