Method

Whisk together the eggs. Chop the basil and add to the eggs along with the chives and season well with salt and pepper. Heat the oil in a large pan, pour in the eggs and cook for a few minutes on each side. Tip onto a large board. Lay over the smoked salmon, sliced onion and a few salad leaves. Sprinkle over the cracked pepper and cut into 8 pieces. Serve 2 pieces on each plate for breakfast or as a starter.
