Cut the zucchini into 10 slices. Remove the stalks from under the mushrooms and press a piece of feta cheese into each mushroom cup. Alternate layers of the stuffed mushrooms, zucchini, lemon peel and mint leaves onto the wooden kebab sticks. When ready, drizzle the vegetarian kebabs with olive oil and grill for 2 minutes on each side till golden brown.
