Wash the rice under cold running water until water runs clear. Leave soaked in cold water for 30 minutes. Boil the rice for 10 minutes, until cooked, drain and spread on a tray. Sprinkle with the Mirin and mix carefully. Take a sheet of Nori and place on top of a bamboo mat. Dab your hands with water and cover the Nori with the rice. Put a slice of cheese on top and decorate with the vegetables or seafood to your liking. Spread lightly with mayo and start rolling pressing firmly into a tight roll. Alternatively, start with the rice, cover with the Nori ans garnish as desired. Roll tightly and sprinkle lightly with the sesame seeds. Slice the sushi and serve with side of Wasabi, pickled ginger & soy sauce
