Start by softening the gelatine in cold water for 3 minutes. Place into a saucepan with the lime zest and juice and melt. Next, place the sugar in the Thermomix bowl and blend on speed 7 for 10 seconds. Add in the berries and chop for 1 minute on speed 7. Place on butterfly attachment, add in gelatine mixture and mix 1 minute on speed 2. Finally, add in the cream and mix for 2 minutes on speed 5. Pour into serving jars and chill for 2 hours to set before serving.
