Wash the potatoes and pat them dry. Put the potatoes in a roasting dish and drizzle with olive oil and rock salt. Cover with foil and cook in a hot oven for abouit 20 minutes or until the potatoes are soft. Meanwhile, mix together the mayonnaise with the mustard and cook the mini beef burgers. Split the potatoes in half, removing the top piece. Spread some mustard dressing over the bottom pieces, and decorate with a salad leaf and tomato slices. Place the beef burgers on top, followed by the sliced cheese. Finally, cover with the potato lid and secure with a skewer.
