Start by greasing a microwave dish with butter and put aside. In a large bowl, mix together the sugar, softened butter, flour, eggs, vanilla essence and the zest of 1 lemon until light and creamy. Spoon the mixture into the dish and bake in the microwave on high for 3-5 minutes, or until risen and cooked through. Spoon over the lemon curd whilst hot and heat for another 30 seconds. Serve the lemon pudding immediately with a generous helping of vanilla ice-cream.
