Wash the chicken and pat it dry with a kitchen towel. Heat the oil and butter in a large frying pan. Add the garlic, lemon zest and rosemary and cook gently for 2 minutes. Place the chicken parts in the pan and cook the chicken over a high heat until it browns all over. Turn the chicken occasionally. Pour the wine over the chicken and season with salt and pepper. Cover the pan and simmer for 25 minutes or until the chicken is very tender. Garnish with fresh rosemary and serve.
