Start by preparing the king prawns. Take a knife and run it down the back of the prawns, removing the vein. To make the crumb mixture, mix together the breadcrumbs, parsley, lemon juice and zest, grated parmesan and chopped garlic. Place the seasoned flour in a bowl and the beaten eggs into another bowl. You are now ready to start coating the prawns. One by one, dip the prawns into the seasoned flour, coating well. Next, dip them into the beaten eggs, and then finally into the breadcrumb mixture. Place the prawns on a greased baking tray and drizzle all over with the olive oil. Bake the prawns in the middle shelf of the oven, at 180°C for about 10 minutes, or until the prawns are golden brown. Serve the prawns with the garlic mayonnaise on the side.
