Method

Chop 3 of the cooked king prawns, and leave the other 3 at the side to garnish the salad at the end. Combine all the ingredients, except for the salad leaves, in a mixing bowl. Add the olive oil, sherry vinegar and salt and pepper, and leave to stand for 4 minutes. Add the leaves and serve on a plate. Garnish with the 3 king prawns.
