Method

Place the salmon fillets onto a cutting board and pat 1 tsp flour on each side and evenly spreading the flour over the salmon.  In a bowl, mix together the minced garlic, ginger and soy and drizzle all over the salmon.  Heat the butter and oil in a pan, place in the salmon into the pan and cook 3-5 minutes on each side browning each side of the salmon well. Roast the potatoes in the oven drizzled with a little oil and seasoned well with salt and pepper. Heat the remaining oil in a pan and quickly fry the onion and asparagus together. Add in the kale and soy, season with pepper and continue to cook for 2 minutes. To serve, pile the stir-fry into 2 serving plates. Spoon the potatoes on the side and lay the salon on top of the stir-fry.
