Herbed tuna patties with feta cheese and avocado orange salad


For the patties

  • 1 tin tuna, drained (3 Leaves)
  • 1 potato, peeled, boiled and crushed
  • 75g crumbled feta cheese
  • 1 egg, beaten
  • 1 carrot, shredded
  • 1 tbsp chopped dill
  • 1 tbsp chopped mint
  • Salt and pepper to taste
  • 5-6 tbsp breadcrumbs (St Georges Brand)
  • Olive oil for frying (Borges)

For the salad

  • Handful baby spinach leaves
  • 1 avocado, sliced
  • 1 orange, segmented
  • 1 red onion, finely sliced
  • 2 tbsp extra virgin oil (Borges)
  • 1 tbsp balsamic vinegar (Borges)
  • Juice and zest of ½ lemon
  • Salt and pepper to taste


To make the patties, just mix all the ingredients together, then roll in the dried breadcrumbs. Shallow fry in a pan with a little oil until golden. To make the salad, just mix together the extra virgin olive oil, balsamic, lemon juice and zest. Pace the spinach leaves, orange, avocado and red onion into a bowl and toss over the lemon dressing. Season with salt and pepper and serve the salad with the tuna patties.
