To make the patties, just mix all the ingredients together, then roll in the dried breadcrumbs. Shallow fry in a pan with a little oil until golden. To make the salad, just mix together the extra virgin olive oil, balsamic, lemon juice and zest. Pace the spinach leaves, orange, avocado and red onion into a bowl and toss over the lemon dressing. Season with salt and pepper and serve the salad with the tuna patties.
