Start by lining a loaf tin with grease proof paper. Next, make the base by whizzing together the coconut, pistachios and dates. Press into the base of the tin. Next, soak the gelatine in the lime juice for 4 minutes, then heat up in the microwave to melt. Place the avocados in a processor with the lemon and lime zest and yogurt and blitz for 10 seconds. Pour in the melted gelatine and whiz together till combined. Spoon the filling over the base and even out. Cover the top with cling film and chill for 2 hours. When ready to serve, cut into thick fingers and decorate the top of each piece with blueberries and pistachios.
