Clean the prawns dice, dice the grouper and sauté in butter, add the chopped lemon grass, chilli, leeks and garlic. Keep tossing on medium heat until butter starts to brown, than pour in the wine and stir well.Add the tomato sauce and coriander toss well and remove from heat. Fill 3/4 of small ceramic containers with the mixture to allow space for the crumble. Slightly crush the oath and mix with the breadcrumbs and walnuts, top the fish mixture with and bake at 180` until the top is slightly browned and serve.
