Flatten the chicken breast, mix well the walnuts, chives and goat cheese in a bowl place the filling on the breast and roll. Beat well the eggs and whisk with the flour, dip the chicken in the egg mix than roll it in the bread crumbs and deep fry until browned than finish in the oven until cooked through. In a small pan sauté in butter the chopped shallot, chilly and peanuts until butter is browned, than add the peanut butter stir well and finish with the cream. Peel dice and boil the potatoes than sauté in butter with the chopped garlic, add the cream, butter, season and mash together. Slice the courgette and grill together with the cherry tomato and serve with the breaded chicken.
