Gluten free pasta with avocado-almond pesto and grilled salmon

Ingredients

For the pesto

  • 1 ripe avocado
  • Handful roasted almonds roughly crushed
  • 2 tbsp grated Parmesan cheese
  • Basil
  • Extra virgin olive oil (Borges)

You will also need

  • 2 salmon fillets
  • Garlic clove
  • Rosemary springs
  • Lemon zest
  • Fresh ground pepper
  • Gluten free pasta (Dr.Schar)

Method

Place the avocado flesh in a bowl and mash with a fork. Mix in the rest of the ingredients, binding well with the oil. Marinade the salmon with the garlic, rosemary, lemon and pepper and grill. Cook the pasta in boiling, salted water, drain and transfer to a sauté pan. Stir in the pesto and flake in the grilled salmon.
