Glazed lemon and lime cake with citrus glaze and raspberries


For the cake

  • 115g butter, softened
  • 125g caster sugar
  • 3 large eggs
  • 215g Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp lime juice
  • Zest of a lemon and lime
  • 200g plain flour
  • 1 ½ tsp baking powder
  • Pinch salt

To decorate

  • 200g icing sugar
  • Juice of a 1-2 lemons
  • Lemon and lime zest
  • Fresh berries to decorate


Heat the oven to 190`c and grease and line a loaf tin. To make the cake, cream together the butter, sugar and vanilla till light, then beat in the eggs followed by the yogurt, citrus juice and zest. Finally, mix together the flour, baking powder and sugar and mix into the cake batter. Spoon into the prepared tin and bake for 45-50 minutes. Remove from the oven and allow to cool down completely. When cool, mix together the icing sugar and lemon juice and pour over the cake. Decorate the top with the citrus zest and fresh berries.
