Put the onions, red pepper and garlic in a pan with a little olive oil and cook for a few minutes until soft. Add the cherry tomatoes and lemon jiuce and simmer until you have thick tomato compote. Mix in the fresh mint, take off the heat and put aside. Cut the squid in slices mix in a bowl with the flour, lemon zest,dill, salt and pepper. Heat the cooking oil in a deep pan and deep fry the flavoured squid rings till golden brown. Serve the deep fried squid rings immediately with the tomato compote.
