Start this recipe but roughly chopping ½ strawberries. Place into a bowl, sprinkle over 1 tbsp sugar and allow to sit for an hour. When ready, blitz into a puree and put aside. Whip the fresh cream with the vanilla and remaining tbsp icing sugar. Hull and quarter the remaining strawberries (reserving some to decorate) Break the 4 of the meringue nest roughly and add to the whipped cream along with the quartered strawberries and gently mix together. Spoon the mixture into the tall glasses, adding layers of the blueberries as you spoon the mixture into the glasses. Finish off decorated with the mint sprigs and remaining berries.
