Start by placing all the peanut sauce ingredients together in a saucepan and cook together for 3 minutes. In a large pan or wok, heat the oil and quickly flash fry the onion and chilli if using for 1 minute. Add in the minced garlic and ginger paste, along with the sliced carrot and broccoli and cook for 2 minutes. Add in the baby sweet corn and cook for 1 minute. Stir in the prepared peanut sauce, cooked noodles and heat together, coating all the ingredients with the peanut sauce. Serve immediately garnished with the sliced spring onion and chopped peanuts.
