Creamy brown pasta with asparagus, sun-dried tomatoes and walnuts


  • 200g brown pasta (Good Earth)
  • ½ onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 1 tbsp olive oil
  • 2 tbsp cream fraiche (President)
  • 2 tbsp chopped sun-dried tomatoes (Tesco)
  • 5 stems asparagus, trimmed and sliced
  • 2 tbsp broken walnuts
  • 1 tsp grated lemon zest
  • 2 slices Parma ham to decorate


Start by heating a pan of salted water and cook the brown pasta till a`ldente. You can also grill the Pama ham till crispy in the oven. Meanwhile, heat the oil and sauté the onion and garlic for 4 minutes till soft. Add in the asparagus and sun-dried tomatoes and cook for just 2 minutes. Finally, stir in the crème fraiche, lemon zest and heat through. Add in the cooked pasta and walnuts, stir well and spoon into 2 pasta plates. Place a slice of crispy Parma ham on top and serve.
