Method

Start this recipe by making the dressing. Place the sugar, vinegar, garlic and chilli flakes into a saucepan with 100ml water. Cook for 5 minutes to thicken then add in the limejuice and fish sauce and remove off the heat. Meanwhile, heat the oil in a pan and cook the salmon pieces to your liking for 4-6 minutes. To serve, place the remaining salad ingredients into a large bowl and toss in the salad dressing. Serve into 2 salad bowls, top with the orange and lime segments and arrange the cooked salmon pieces on top.
