Grill the beef fillet from both sides, finish in the oven and place the mozzarella and a slice of tomato once out of the oven. Slice the sweet potato skin on boil until soft than grill on a griddle pan to bar mark. dice the pineapple, chop the chilli, basil, shallot and mix well together with the baby spinach. Peel and press the garlic, sprinkle with olive oil season and roast, once out of the oven toss with the thyme and top with the slightly warmed olive oil, allow to infuse than drizzle with beef salad with.
