Grease and flour a 23cm cake tin. Put the butter and sugar in a bowl and beat till pale. Add in the egg, vanilla essence and lemon zest and mix till smooth. Stir in the flour, baking powder and soda, and then finally mix in the buttermilk. Pour the batter into the prepared cake tin and arrange the strawberries on the top of the cake. Sprinkle over the remaining tablespoon of sugar and bake for 30 minutes, at 200`c. Leave the buttermilk and strawberry cake to cool down completely before removing from the tin. Serve the cake dusted with icing sugar.
