Brown pasta chicken Waldorf salad


  • 150g gluten-free brown pasta (Schar)
  • 2 tbsp Greek yogurt
  • 1 tbsp light mayonnaise
  • Zest of a lemon
  • 1 clove garlic, finely chopped
  • 1 tbsp chopped fresh parsley
  • 2 spring onions, sliced
  • 10 toasted walnuts
  • 10 black grapes, halves
  • Few salad leaves to decorate.
  • 1 chicken breast, butterflied
  • 1 tbsp olive oil
  • Few thyme leaves


Cook the pasta, drain and cool. Heat the oil in a pan, season the chicken with salt and pepper and thyme leaves and pan fry for 4 minutes on each side. Meanwhile, add in all the remaining ingredients to the pasta and mix well. To serve, spoon the pasta into 2 large plates, slice the chicken and arrange on top with a few salad leaves.
