Braised rubbed pork belly

Ingredients

  • 300g pork belly
  • 1 tbsp ground cinnamon
  • 1 tbsp sweet paprika
  • 1 tbsp cumin ground
  • 1 tbsp mixed spice
  • 1 tsp chilli flakes
  • 1 tbsp whole cloves
  • 50ml soy sauce
  • 200ml bbq sauce
  • 200ml honey
  • 200ml English mustard
  • 500ml stout
  • Bunch rocket to gurnish

Method

Using a very sharp score the pork fat side across crisscross, and sprinkle the cinnamon, paprika, cumin, mixed spice, chilli and garlic from both sides. Then spread the mustard and bbq sauce from both sides too and grill on a well preheated pan to seal the meat. Once pork is well sealed place on an oven tray fat side up drizzle the honey on top while beer and soy sauce in tray. Cook for approximately 2 hrs at 165`c.
