Dice and boil the potatoes until soft, in a bowl mix well all the ingredients and form the patties, dust with some extra flour and shallow fry in a preheated non stick pan. Peel boil and slice the beetroot, slice the leeks and cut the orange in segments. Mix all the ingredients together and serve on the fritter. Drizzle the extra dressing around the salad.
