Seal the grouper on a pre heated non stick pan than finish in the oven. Add the crushed garlic and sauté on low heat in olive oil, add the wine, simmer than pour in half the cream and continue simmering until reduced by half. Finally whisk in the butter, herbs and remove from heat. Slice the leeks and sauté in butter with the nutmeg without coloring, add the 1/4 of the cream simmer for 1 minute than add the cheese and remove from heat. Peel, chop the prawns and in a bowl mix well with the beaten eggs, chopped spinach, parmesan and couscous. Place the mixture in muffin silicone moulds and bake until browned.
