Method

Soak the apricots and sesame seeds a few hours before. Keep them in separate bowls. Peel the ginger and grate. Place the apricots and their soaking water together with the grated ginger and cardamon pods in a saucepan. Simmer gently for a few minutes. Serve warm with a spoonful of yogurt and sprinkle with the sesame seeds. You can replace apricots with prunes or figs in this recipe or simply use a mixture of the dried fruits. Ginger besides giving that spicy spike to your recipe has a lot of healthy properties too. As for the apricots always make sure you choose the brown unsulphured variety
