Heat the oven to 200`c and line a 12-hole muffin tin with paper cases. Mix the egg, melted butter and milk quickly into the dry ingredients with the chopped apple and pecan nuts (don’t over mix, it should be a bit lumpy). Divide between the cases and bake for 25 minutes until risen, golden and cooked through.

  • Try using blueberries and white chocolate instead of the apple, pecans and cinnamon as another option.
