Butter and line a 10-inch spring form cake tin. To make the cake, beat the butter, sugar, and vanilla seeds for a few minutes or until light and fluffy. Add the eggs, 1 at a time, beating for 2 to 3 minutes or until creamy. Sift together the flour, baking powder, and salt and beat into the cake batter. Spread the cake batter into the bottom of the cake tin. Arrange the apples on top, pushing the apples slices gently into the batter and scatter the berries amongst the apples. Next, make the crumble by rubbing together the flour and butter. Sprinkle the crumble over the fruit. Mix together the 2 tbsp sugar with 1 tsp cinnamon and sprinkle on top. Bake in the oven at 180`c for 50-60 minutes. Serve the crumble either hot or cold.
