For the puree, grate the rind of the orange and squeeze orange juice. Add all ingredients in a sauce pot and cook until carrots are tender. Blend and put aside. Rub olive oil on salmon, the roll in almond flakes and green pepper corns. Heat pan and seal the salmon. Put in an oven proof dish and bake for approximately 12 minutes in a pre heated oven. Serve together with puree and sprinkle some dill.
